Canal Street Sazarac

2 oz Belle Meade XO Cognac Cask Finished Bourbon
1/2 oz Demerara Syrup*
2 dashes of Peychaud's Bitters

Rinse: Absinthe
Glass: Chilled Rocks
Ice: None
Garnish:None

 After chilling the rocks glass pour in 1/4 oz of Absinthe and roll the glass in your hands to make sure the walls of the glass are coated with Absinthe up to the very rim of the glass. Pour out any excess Absinthe. Then place all ingredients into a mixing glass with ice and stir briefly. Strain your cocktail into the rinsed glass and serve. 

Just after the Louisiana Purchase American's started to move into New Orleans. They settled in the area West of the French Quarter across Canal Street. Canal street became the center of the French and American cultures mixing to form New Orleans as we now know it. Much like Canal street Belle Meade Bourbon XO Cognac Cask Finish is a mix of two cultures, American Bourbon and French Cognac casks.

*Demerara Syrup, 2:1 Demerara or Turbinado sugar to water. Stir over low heat until crystals are all dissolved. Let cool and refrigerate. Shelf life 2 weeks.
